Ingredients 1 whole wheat pizza crust
2 Tbls prepared pesto
1/2 cup mozarella cheese
1 (9 oz) package frozen artichoke hearts, thawed and drained.
2 ox thinly sliced prosciutto
2 Tbls shredded Parmesan cheese
1 1/2 cups arugula leaves
1 1/2 tbls fresh lemon juice.
Instructions Preheat oven to 400˚
Spread pesto evenly over crust.
Sprinkle with mozzarella.
Coarsely chop artichokes. Arrange artichokes on pizza, top with sliced prosciutto. Sprinkle with parmesan. Bake 12 minutes.
Place arugula in a bowl. Drizzle juice over arugula, toss gently. Top the pizza with arugula mixture. Cut pizza into 4 wedges.
