Baked Cod

Ingredients 1/4 Tsp salt
1/4 Tsp smoked paprika
dash black pepper
dash cayenne pepper
1# fresh cod fillet, cut into 4 equal pieces.
1 Tbls butter, melted
Juice of 1 lemon
2 small tomatoes
4 Tbls grated Parmesan Cheese
Instructions Combine spices in a small bowl. Set aside
Preheat the oven to 425˚. Arrange fillets in a 8 x 10 baking pan.
Melt the butter in a small bowl in microwave for 10 - 20 seconds.Brush the top of each fillet with butter, drizzle a little lemon juice on the fish, then sprinkle the spice blend evenly over the top of each fillet.
Arrange 2 to 3 slices tomato over each.
Sprinkle Parmesan over each tomato slice. Be sure to cover at least 50% of the slices, and its okay for some of the cheese to fall on the fish. (Ok, I like lots of cheese!)
Bake, uncovered for 8 - 10 minutes. Turn oven to a high broil and continue to cook for 6 - 8 minutes more or until the cheese begins to brown. Serve 2 pieces of fish per serving.
Comments This is the baked fish I have always been looking for! Delicious with brown rice and succotash as sides. But will go with anything.
